Couscous (or cous cous) is a traditional North African dish, documented since the 11th century, whose main ingredient is moistened durum wheat semolina, shaped into small round balls of 1 to 3 millimeters.

This recipe is inspired by Moroccan cuisine, so the spices play a leading role and the flavor is warm and exotic, yet very familiar.

Textured soy, one of the main ingredients of this dish, thanks to its texture and absorption capacity, lets you enjoy all the flavor and nuances of the delicious sauce that accompanies it, with the added advantage of being a source of protein that is low in fat and sugar and cholesterol-free.

As for its nutritional value, this couscous is rich in complete protein, carbohydrates, fiber, allicin, alliin, flavonoids, beta-carotene, lycopene, vitamins A, C, E, K and the B group (B1, B2, B3, B6 and B9 or folic acid), sulfur, calcium, phosphorus, magnesium, potassium, selenium, sodium and, in smaller amounts, copper, iron, manganese and zinc.
