Coconut rice pudding
Rice pudding is a dessert of Arab origin made with ingredients introduced to the Iberian Peninsula by the Arabs, including rice, citrus fruits, sugar and cinnamon.
Over the centuries, it has spread to many countries, resulting in countless regional variations.
Some versions include raisins, shredded coconut or cardamom; others use lemon or orange zest, a layer of caramelized sugar or, as here, a dusting of cinnamon.
This easy dessert requires only a few simple ingredients and tastes just as good warm as it does cold, making it suitable for any time of year.
This version contains no cholesterol, lactose, casein or trans fats. Cinnamon and coconut give it a rich, fragrant flavor, complemented by a smooth, creamy texture.
As for the main ingredients, rice is rich in energy-providing carbohydrates, vitamins D, E and B vitamins (B1, B2, B3 and B9 or folic acid), calcium, iron and phosphorus. Meanwhile, coconut milk, besides being rich in phosphorus and vitamins B1, B2, B3 and B9, also provides vitamins B5 and B6, potassium, selenium and chromium, although in smaller amounts than canned coconut milk because its coconut concentration is lower.

- Step 1Wash the rice by placing it in a strainer and running it under the tap until the water runs clear. Drain it well and put it in a saucepan together with the orange peel, the cinnamon stick and the coconut milk beverage, all cold.
- Step 2Heat it over high heat and, when it starts to boil, let it cook for 30 minutes over medium heat, stirring occasionally so the rice does not stick and gradually thickens and becomes creamy.
- Step 3After this time, add the sugar, stir, lower the heat almost to the minimum, and cook for 10 more minutes so the rice finishes cooking.
- Step 4When the rice is ready, turn off the heat, remove the cinnamon stick and the orange peel, divide the rice pudding among bowls, and let it cool to room temperature. Once cooled, sprinkle a little ground cinnamon on each serving and serve right away, or chill it in the fridge for a few minutes so it is cold when you eat it.
