Chilled pumpkin and mango soup
This chilled pumpkin and mango soup is a light dish with a delicious flavour that comes from the exquisite combination of its ingredients, which create a parade of delicate notes that fill the palate with their irresistible, evocative fragrance.
Besides being the star of this recipe, mango is a fruit packed with antioxidants and very filling. Its name comes from the Tamil word 'mangay', which is what it is called in the region of Malaysia, Sri Lanka and southern India, a country where it has been grown for more than 4,000 years.
Its flavour is sweet and very mild, with a fresh note that is ideal for cooling down on the hottest days of the year. But the best part is that it is just as delicious served warm or hot instead of cold, as different aromas come to the fore depending on the temperature at which it is eaten.
Thanks to its ingredients, this dish is rich in antioxidants, flavonoids, fibre, carotene, lycopene, carbohydrates, omega-9 fatty acids, allicin, alliin, vitamins A, C, E, K and B-group vitamins (B1, B2, B3, B5, B6 and B9 or folic acid), sulphur, calcium, copper, phosphorus, iron, magnesium, potassium, sodium and, in smaller amounts, manganese, selenium and zinc.

- Step 3Wash and peel the mangoes, chop and set aside.
- Step 4Heat the oil in a saucepan and, when it is warm, add the onion. Cook over medium heat for 5 or 7 minutes, until softened, stirring occasionally so it does not burn.
- Step 5When the onion is transparent, we toss the pumpkin and stir for 5 minutes to mix with the onion.
- Step 6Add the water and salt and let it cook for 15 minutes.
- Step 7After this time, add the mango and cook for 5 more minutes. Then turn off the heat and leave it to cool until lukewarm.
- Step 8Once lukewarm, blend everything thoroughly until you obtain a light, lump-free soup. If desired, pass it through a fine conical sieve to ensure it is smooth and completely free of lumps.
