Autumn is the best time to enjoy berries (also known as red fruits), and there is no better way to do so than with a delicious 100% plant-based cheesecake.

Since this cheesecake contains no ingredients of animal origin, it is much lighter than the traditional one and is also cholesterol-free, because plant-based ingredients contain none.

As for the flavor, by turning the different berries into a mouthwatering candied topping, its mild tangy touches bring out the sweetness of the body of the cake, and the cookie base it rests on takes on an even more delicate flavor.

As for the look, since berries contain carotenoids and anthocyanins (pigments that give these fruits their characteristic hue), they add an intense color that brings this dessert to life.

The berries used are a mix of blackberries, raspberries, blueberries, blackcurrants, redcurrants and strawberries, so by adding them as a topping to the cheesecake, we eat fruits rich in fiber, antioxidants (especially polyphenols, carotenoids and anthocyanins), lecithin, polyphenols, flavonoids, vitamins A, C, E, K and B vitamins (B1, B2, B3, B5, B6, B7 and B9 or folic acid), calcium, phosphorus, iron, magnesium, potassium, zinc and copper.

On the other hand, since the body of the cake is made with tofu, which is very rich in protein and calcium and also contains lecithins, omega 3 fatty acids, vitamins E, K and B vitamins (B1, B2, B3, B5, B6, B7 and B9 or folic acid), phosphorus, magnesium and potassium, we will also benefit from all these nutrients.
