Any béchamel fans here?
We certainly are, especially fans of the version that Santuario Gaia makes for its vegan cannelloni recipe. We've never tasted a better béchamel!
We immediately added it to our list of essential recipes and make it whenever we want to impress our guests with a delicious, 100% plant-based béchamel.
As you'll see, it's also very easy to prepare!

Notes
When selecting vegetable margarine, check that it is not hydrogenated and that it does not contain palm oil or any ingredient of animal origin (Eg: Flora brand olive margarine has gelatin among its ingredients).
It is important that soy milk is sugar-free, so Provamel brand Bio soy milk (the one in the white and orange container) is a perfect option.

- Step 1Grate the onion and heat the margarine in a pot. When this is undone (being careful not to burn), we toss the onion, salt and pepper and stir.
- Step 2When the onion is poached, add the vegetable broth pill and the soy milk and stir again.
- Step 3In a bowl, we make a mixture of flour and water (without it being very liquid) and, when the milk from the pot begins to boil, we add it in. We put a little nutmeg, stir everything well and leave it for a few minutes over medium heat.
